How to Make a Cheese and Potato Pasty

Its not hard to make this Perfect Cheese and Potato Pastie Recipe. In fact its super quick and also super cheap! All you need are a few basic ingredients, and you can cook 12 of these little beauties in a flash. Sandwich boxes for the week are prepared super quick if you are organised and get these cooked on a lazy Sunday afternoon!!

My children all love these Perfect Cheese and Potato Pasties. No matter what their age, from small to big, they have taken these to school over the years and they all get eagerly eaten. It also gives some variation upon a normal sandwich or simple wrap. Cooking big batch style means that there is plenty for the week too! Its a great way of using up leftover potato- or even having an excuse to cook more potatoes!! They would also be suitable for picnics as they are very portable.

There are so many ways these can also be adapted to use up leftovers too. In the past, I've added bits of bacon, onion, sausage, or minced beef. I often look in the fridge and think- what have I got that is getting real close to throw out and make up variations of these pasties. Believe me- once its cooked inside that golden pastry and topped with sesame seeds- it looks pretty as a picture! Its one of the easiest things to grab on the go for busy children too. No more half eaten sandwiches and flaky pastry isn't a worry if eaten outdoors. My kids regularly eat half, go off and play handball, then return for the other half.

For this recipe, I actually cooked some potatoes especially. It really didn't take long at all. I could have made Perfect Cheese, Onion and Potato Pasties, but I couldn't be bothered with washing up another pan. Hence I stuck with just plain Potato and Cheese Pasties, and they turned out a real treat. Hearty and filling for kids on the go, full of those carbs for bottomless tummies. They will keep them warm on those cold winter days, and still taste great on those hotter days.

How to make Perfect Cheese and Potato Pasties

Ingredients

  • 250g cheddar cheese grated
  • 500g potatoes suitable for mashing
  • freshly grated nutmeg (just a little- this enhances the cheesy flavour- yes really!!)
  • salt and pepper
  • 1 tablespoon dried parsley
  • 6 sheets of frozen puff pastry
  • one egg for glazing
  • few sesame seeds to top pasties before cooking
  • a knob of butter

Instructions

The first step is to peel the potatoes and to boil them in a pan with a little salt in the water. I don't know why I add salt but my mum always did it and I learned from the best. If you already have some potato mash from yesterdays dinner- woohoo! You are almost finished!!

While the potatoes are cooking, take out the pastry to defrost on a warm countertop. Then grate some cheese and place it in a bowl with the salt, pepper, parsley and nutmeg. You could add cooked onion at this stage if you have some, or bacon, or any cooked meat.

Once the potatoes are cooked, add the cheese mixture and mash in with the knob of butter. Blend it all together well.

Cut the pastry sheets lengthways so that you have a large long rectangle. Divide the mixture between the 12 long rectangles, placing a large spoonful at the bottom of each rectangle. Fold each pastry sheet in half to create a square and seal edges with a fork.

Brush each one of the cheese and potato pasties with egg and sprinkle each one with sesame seeds before baking in a medium oven. Around 25 -30 minutes should do the trick nicely.

Tips and variations on Perfect Cheese and Potato Pasties

  • Sprinkle the pasties with poppy seeds instead!
  • Use leftover corned beef and mix with onion and creamy mash to make corned beef and potato pasties instead
  • Use milk to glaze instead of egg- it works just as well
  • Add other herbs to the same mixture such as oregano or tarragon. This would change the flavour completely but work just as well.
  • Any veggies or meat with gravy that you have leftover from Sunday dinner would work well, or even leftover curry and rice- why not?
  • Try mixing in a tablespoon or two of my mango chutney into the potato mixture for a different, more spicy flavour!

How long will the pasties keep in the fridge?

Approximately 1 week. They would be unsuitable for freezing.

  • 250 g cheddar cheese
  • 500 g potatoes suitable for mashing
  • 1 knob butter
  • 1 tbsp dried parsley
  • salt and pepper
  • grated nutmeg
  • 6 sheets frozen puff pastry
  • 1 small egg for glazing
  • 1 tbsp sesame seeds
  1. take out of freezer pastry sheets and leave in a warm place to defrost

    boil potatoes until cooked with a little salt in the water

    add cheese, parsley, nutmeg and salt and pepper to a bowl.

    Mash potatoes with butter and add cheese mixture.

    Slice pastry sheets lengthwise. Divide the minute into 12 between each half pastry sheet, spooning it on to the lower half of each rectangle. Fold each half over and seal with a fork. Brush with egg, sprinkle with sesame seeds and bake in a medium oven for approximately 25 minutes or until golden.
